chicken tikka masala

Ingredients :

Chicken breast - 3

1 large tomato - chopped finely

1tsp tomato puree

oil 2 tsp

salt to taste


Masala:

Minced garlic - 1tsp

Minced ginger - 1tsp

cayenne pepper - 1tsp

paprika - 2tsp

cumin powder - 1tsp

coriander powder - 1tsp

garam masala - 1 tsp

turmeric powder - 1/2 tsp

cardamom - 3

cinnamom - 1 stick


Step 1:
Prepare the ingredients
First of all, chop up the tomato finely and set aside for later use. Next, finely chop the onions and set aside. Finally, cube the chicken breasts into bite-sized pieces, season with a little salt and also put to one side.


Step 2:
Make the masala paste
Mix together in a bowl the ginger, garlic, cumin, coriander, turmeric, cayenne, garam masala and paprika.


Step 3:
Put the oil into a pan over a medium heat. When hot, add the cardamom pods and cinnamon stick, leave for a few seconds and then remove. This flavours the oil, giving it a wonderful aroma. Add the onions and cook while stirring, until brown.


Step 4:
Add the masala paste and stir for a minute.


Step 5:
Add the tomato and tomato purée and stir for a minute till thoroughly combined.
Pour in the water and bring to a gentle simmer, stirring constantly.
Taste the sauce and season with salt if necessary.


Step 6:
Add the chicken cubes and mix well into the masala. Simmer for 10-12 minutes, stirring every few minutes, until the chicken is cooked and tender. Check this by piercing the chicken with a sharp knife - if it goes straight through and comes out clean, it is done. For a weaker curry flavour, add either 1 small tin of coconut milk or 1 medium sized carton of yoghurt. Mix well and simmer for another 5 minutes.


Step 7:
Garnish and serve

Kadai paneer( Punjabi dish )


Ingredients :
You will need…

Paneer - cut in to cubes 8oz

Bell pepper - cut in to cubes 8oz

coriander seeds - 2 tsp

dry whole red chilli - 2

red chilli powder - 1tsp

turmeric powder - 1/2 tsp

salt to taste

oil for tampering - 1 to 2 tsp

kasutri methi - 1 tsp


Method:
1.Kadhai sauce
First, put two whole red chillies and 3 teaspoons of coriander seeds into a blender or food processor, and blend for about 20 seconds until you have a coarse powder.
Put 3 tbsp of oil into a frying pan to heat over a hot flame. Add the coarse powder to the frying pan. Stir, turn down to a low heat, and leave to fry for about 3 minutes
Use a sharp knife to finely chop the 6 cloves of garlic. . Add the garlic to the frying pan and fry for about 5 minutes until golden.
Chop up the tomatoes and add them to the pan. Turn the flame up to a high heat and cook for a further 2 minutes, stirring occasionally.
Add 1 level teaspoon of red chilli powder, and 1/2 a teaspoon of turmeric powder, and stir. Turn down to a medium heat, cover, and leave for about 20 minutes until the tomatoes are pulped.

2.Paneer
Paneer is a homemade or farmhouse cheese originating in India. It's made with cow's milk, is white in colour and soft in texture. It has a mild flavour, and is great in heated dishes, as it retains it's shape, and doesn't melt. It can be bought already cubed like this. If you have bought it whole, cut 250g of paneer into 1cm cubes.
Then, fill a small bowl with warm water. Heat one tablespoon of oil in a frying pan over a high heat. Add the cubed cheese, and fry for about 1 minute. Then, carefully take the cheese out of the pan and place into the bowl of warm water for later. Cut the green peppers into squares of a similar size as the cheese. Heat about 1 and 1/2 tablespoons of vegetable oil in the frying pan, over a medium heat. Now, add 5g of coriander seeds. The seeds will start to crackle, and pop. When this happens, add the paneer cheese. Fry for about 2 minutes until a little bit golden. Then add the chopped peppers. stir for about 1 minute.

3.Mix
Add a little water to the pan. Keep stirring until it comes to the boil. Pour in the Kadhai sauce you prepared earlier. Add a large pinch of Kasoori Methi to the pan, and stir. Kasoori methi are dried fenugreek leaves. They are often used in Indian cooking and taste similar to celery and fennel, with a slightly bitter flavour. Finally, roughly chop a small bunch of fresh coriander.
Handy Hint: Wash the coriander after you've chopped it. Put the leaves into a bowl of cold water and swirl them around for about 30 seconds. The freshest leaves will float to the top. Remove these from the bowl and leave to drain. Then gently stir them into the sauce. Add a handful of coriander to the pan.


4.Add half a teaspoon of salt. Stir for a further 30 seconds and then serve.

Home made Pizza


Hi frnds here is my Home made pizza ......

Pizza base:

Ingredients:

4 cup (all purpose flour / Maida)

Active dry Yeast - 1 packet ( Is good enough for 7 cups of flour)

warm water - 275 ml

sugar - 2tsp salt - 1tsp

Method : 1. pour the dry active yeast to 275 ml warm water ( not a hot water then the yeast will get spoiled ) , add salt , sugar and one cup flour to it mix well. and keep aside for 10 to 15 mins.( if the mixture starts double the size its a good sign i.e the yeast is acting good )

2. in other big bowl add a 3 cups of flour and olive oil , after 10 mins add the yeast mixture to it and mix well make it to a dough add little oilve oil to it and cover the vessel by wet cloth and keep it in a warm place for 1 hr .

3. now the mixture is double the size and has lots of air bubble in its so again press with hands and add oilve oil and cover with wet ( dipped in water and squezzed )cloth ), again keep it in warm place for half an hour .4 . now the pizza base is ready press with hands ... apply oilve oil place it in a pizza pan / stone or norwal tawa ( use for making dosai or roti ) with out plastic handle , spread the pizza base on it either thin crest or thick one , apply marinara sauce add toppings as ur wish( i added pineapple, jalapeno , tomato , onion, bell pepper ) and add shredded mozzerolla cheese now apply oilve oil at the corners of the pizza so that it will be crispy .

5. pre heat the oven for 475 degree and place the pizza pan and wait till the cheese became golden brown or cook for 10 to 15 mins . if you are using tawa , before placing inside oven heat directly by placing in stove for 5 mins in slow sim so that the bottom of the pizza cooks first .

6. Home made pizza is ready now .

Chocolate brownie


WALNUT CHOCOLATE BROWNIE
Ingredients :All purpose flour - 4 0zsugar - 5 ozbutter - 6 ozsemi dark chocolate- 6 ozvanilla essence - 1tsp baking powder - 1tsp salt - 1/4 tsp walnut chopped - 5 0z egg - 2
Method:1.preheat the oven @ 180 degree for 15 mins
2.first melt the butter and choclote in a bowl in microwave for 1 min and allow to cool and mix well with whisk
3.In another bowl mix rest of the ingredients and now pour the chocolate mixture to flour mixture and mix well with whisk
4. pour them in a greased cake tray and keep it in oven and bake for 30 to 40 mins or till it done ..
5. Allow to cool and cut in to pieces / tip just sprinkel icing sugar on top for final touch .
